Cold chain

The cold chain is the unbroken sequence of refrigerated or frozen storage and transport that keeps perishable food at a safe temperature from producer to customer.

For a delivery business the chain runs from the cold room, through packing, the vehicle and the route, to the customer's porch or cooler. USDA's guidance is that perishables should arrive frozen, partly frozen or at 40°F or below; above that the two-hour clock starts.

In Porch Route the cold chain is enforced at planning time: each vehicle declares whether it can carry frozen, refrigerated and dry, and a stop only goes on a vehicle that can hold its temperature. A per-stop temperature log is coming.
